The mission of the Egg Safety and Quality Management (ESQM) Program is to ensure that eggs sold in California are of known quality, origin, grade, and size. This department is then responsible for enforcement of state and federal laws pertaining to eggs and egg products, and regulations relating to the preparation, packing, shipping, or sale of eggs.
